It is called the KANYAMAN Filipino Food Festival, and it will highlight Filipino gustatory delights from the culinary capital of the Philippines – Pampanga. This buffet will be from June 8 – June 22.
And here’s Chef showing us how he makes lamb shank kaldereta:

We were treated to an “advanced screening” of the buffet that will start tomorrow. For the most part, the buffet has all of the stations it usually has, which I reviewed in my previous Food Exchange Manila buffet post. You still have the usual Indian, Japanese, Chinese, Italian, dessert, drinks, and cold cuts stations.
The main dishes in the Kanyaman Filipino Food Festival are the ones that feature the special dishes by Chef Sau.
The dishes I liked and I recommend you check out are: the Macadamia Kare-Kare, the 3 kinds of Lechon Belly (Chocolate/Cheese, Bringhe, and Mango), Lamb Shank Kaldereta and the turon that is filled with leche flan! Make sure to drizzle some (or a lot!) of butterscotch or chocolate sauce. Go easy on the foie gras sisig because it’s very rich! Other delicacies like tamales, tinapa mousse, etc.. are also showcased.
First Round, I got some (starting at 11 o’clock position going clockwise) lamb shank kaldereta, morcon, lechon, sisig foie gras, tamales, macadamia kare-kare with bagoong on the side, rellenong bangus. In the center is a pile of paella valenciana.
The leche flan-filled turon, drizzled with a lot of butterscotch sauce:
We didn’t have the Truffled Sisig Paella that day so I’m looking forward to going back to try it!
This is one of the best buffet deals I have come across recently – only P1,200 on weekdays for both lunch and dinner, and it features dishes by a celebrity chef, too!
